Tomato Bisque Recipe

Here's the recipe for the Tomato Bisque. I hope you all enjoy as much as I do.

Ingredients:
1 large can stewed tomatoes
1 small can tomato paste
1 fresh tomato
1 stick butter
3 cloves garlic (minced)
1 pint heavy whipping cream
2 carrots
2 bay leaves
1 stalk celery
1 yellow onion
1 carton Chicken Stock (or sub. Veg. Stock)
1 bunch of fresh basil

Step 1: Start with a mirepoix (chopped carrots, onions, celery (3 sticks) and cooked down in half a stick of butter). Reduced about 15 minutes or until vegetables soften a bit. Salt and Pepper to taste. Set aside...

Step 2: In a separate pan use 1/4 sick of butter with minced garlic and 1/4 of the minced onion and cook until it starts to turn yellow (2 to 3 minutes). Careful not to burn! Then ad the tomato paste and continue to cook for about 3 - 4 minutes. Salt and Pepper to taste.

Step 3: Combine the mirepoix and the tomato paste mixture in a large pot. Add stewed tomatoes and half to 3/4 of stock and bay leaves and cook simmering for about 15 to 20 minutes. Salt and Pepper to taste.

Step 4: Remove bay leaves and use a stick blender to thoroughly mix everything.

Step 5: Add 1 cup to 1 pint of heavy whipping cream. Depending on how creamy you like it. Mix again. Salt and Pepper to taste.

Step 6: Add basil and mix again until basil is finely mixed into the soup. Salt and Pepper to taste.

Step 7: Continue cooking for about 10 minutes on low heat and serve. Salt and Pepper to taste :)
